Frito Pie

This recipe is so EASY! My family loves it.

Ingredients:
Chili (canned or homemade)
Fritos - Original or other (we like the chili cheese)
Shredded Cheese

In a 9 x 13 or larger pan - Cover the bottom with Fritos. Over the Fritos add your Chili - you want enough to fill the pan and then top with the cheddar. For a 9 x 13, I use about four 15 oz. cans of chili. Bake for 30 minutes at 350. We usually serve with a green salad.

Petros!! That's what we call a variation of this recipe...we put fritos in individual bowls then add all the "stuff"...chili, cheese, sour cream, salsa or taco sauce. I furst ate Petros at the 1982 World's Fair in Knoxville, TN. At that time, they were actually served in the little fritos bags! Fun!! We eat these often...it's one of my favorites and I ALWAYS overeat! lol!!

LIke Jenny said, buy the small frito bags and split them open the long way. Pour the chili over the Fritos and add onions and cheese. Delish!!!

We do something similar, but we call it Taco Casserole. We use the baked corn chips (1.5g of fat per serving instead of 30g!!), crush a large bag and put in the bottom of a casserole. Add a layer of refried beans or lentil and rice burrito filling, a layer of salsa, and top with just a sprinkle of shredded cheese. When we serve it out, I offer sour cream, tomatoes, shredded lettuce, whatever we normally would add to a taco. And a green salad. It's just not the same without the green salad on the side ;-)

Coffeemama, Thanks for the idea. I will have to try it your way. It sounds much healthier. I am trying to get started on menu planning and then change things a little at a time to healthy up our eating.
